Cheeseburger Cauliflower Casserole

This dish was a completely spontaneous creation. I knew I’d like to cook the cauliflower that had been in the fridge for a few days. Checked out the fridge and saw the ground beef that my husband just bought today. It’s 88% lean, not great for hamburgers but perfect for some cauliflower casserole. I liked it instantly. It’s super healthy but not lacking protein. It would make everyone in my home happy.

Cheeseburger Cauliflower Casserole

A great way to give my kids a healthy portion of veggies, with all the great flavor of cheeseburgers!

Ingredients

  • 1 head cauliflower cleaned and chopped
  • 1/2 yellow onion diced and divided into 2 equal portions
  • 3 cloves garlic crushed and diced
  • 4 tbs avocado oil
  • 1 lb ground beef 88% lean
  • 1/2 tsp black truffle salt
  • 1/2 tsp salt
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat the oven to 400 degrees F (200 degrees C)
  • Grease 9×13 inch Pyrex pan using 1 tablespoon lard or avocado oil
  • Mix cauliflower with garlic, half portion of onion, 2 tablespoon avocado oil and 1/2 teaspoon salt in Pyrex pan
  • Heat cast iron pan/flat pan in medium high, add 2 tablespoons avocado oil once it's hot. Add ground beef to the pan and stir it to break it into small pieces. Mix in black truffle salt and continue to stir until the beef is not pink anymore. Take off the pan from heat immediately to avoid overcooking it.
  • Take the Pyrex pan out of oven, mix the ground beef with cauliflower and lay cheddar cheese on top of cauliflower mixture. Continue to bake the dish until cheese is melted and lightly browned.
