My kids always have, and still do, love steamed broccoli with butter. Thank goodness for that. Broccoli has been my backbone & hero vegetable whenever I didn’t have time to cook other veggies or ran out of veggie ideas for the kids since they were little. Now they’re much older and the steamed broccoli with butter definitely grew old. Because the broccoli tastes the best when it is at its natural stage, therefore I’d love to stick to the basics. I’m sure you’ve tried the garlic broccoli in your favorite Chinese restaurant in the past. But since we can’t go out to eat now, I cooked my own version of the garlic broccoli two nights ago. I used Chinese high-heat stir fry technique to cook the broccoli. The 2-3 minutes of high heat stir fry caramelized the outside layer of the broccoli to bring out its sweetness. The savory broth seasoned the broccoli thoroughly. It was a good success. The bowl was empty within a few minutes.
Garlic Broccoli Stir Fry
Equipment
- A large skillet or wok
- A steamer basket
- A large saucepan
Ingredients
- 10 cup broccoli florets
- 3 cloves garlic smashed and diced
- 2 tbsp corn starch
- 1 cup vegetable broth or your own preference like chicken broth
- 1 teaspoon salt or to taste
- dry chili pepper flakes optional
- 5 tbsp avocado oil or any high smoke point cooking oil
Instructions
- Prepare the broccoli: Wash them and put them in the steamer basket in a large saucepan with water. Bring the saucepan to a boil and steam the broccoli for a minute. Rinse them in the cold water immediately to keep the fresh green color and the texture. Drain the broccoli and set it aside.
- Prepare the corn starch broth: Add the starch, vegetable or chicken broth, salt and ground black pepper to a small mixing bowl. Mix the broth well.
- Heat the skillet over high heat, add the oil to the skillet once it's hot. Add in the garlic and chili flakes (optional) to the hot oil. Immediately add in the cooled and drained broccoli to the skillet and give them many stirs and keep stirring to avoid burning the broccoli. Add in the corn starch broth to the skillet and stir and mix the broccoli well. Keep stirring until the broth mostly disappeared. Remove the skillet from the heat right away to avoid overcooking.
