Ingredients
- 2 pounds boneless skinless chicken breasts cut into 1/2-inch chunks
- 3 golden potatoes cut into 1/2-inch chunks
- 3 carrots cut into 1/2-inch chunks
- ½ onion thinly sliced
- 2 cloves garlic crushed
- 1 14 counce can coconut milk
- 2 tbsp coconut oil
- 2 tsp salt or to taste
- 1 tsp curry powder
Instructions
- cut chicken, potatoes, carrots, onion & garlic
- Pour the coconut milk into the medium saucepan. Add the potatoes and carrots to saucepan, bring the coconut milk to boil and turn heat to medium for 10 minutes. This step will save you the most time consuming part that is to cook potatoes and carrots soft. If you void this part and go straight to put potatoes and carrots together with chicken to cook, it'll need at least 15-20 minutes to cook them soft, by then the chicken will be very dry and rubbery.
- While cooking potatoes and carrots, you’re working on this step simultaneously. You’ll need a big saucepan on medium high heat, put coconut oil in the pan first, add onion once the oil is well melted and hot. Saute onion until it's brown. Then add curry powder, crushed garlic to mix until well integrated. Then stir in chicken to onion mixture, continue to stir until they're well mixed. Pour the coconut potatoes and carrots mixture to the chicken once the chicken starts to change its color but it's still pink in the center, add in salt and stir to make sure all the ingredients are well mixed. Lower the heat to medium and cover the saucepan, let it cook for another 5-10 minutes (or the time that meet your desired texture of the chicken). Avoid over cook to keep the chicken tender.
