Chicken Stir Fry with Bell Peppers

Our family finished the dish in no time. The chicken tastes so light & tender, the bell peppers are refreshingly sweet and crisp. It goes perfectly with some steamed rice. Sprinkle some lemon juice over the stir fry and the rice, yum! This dish is a wonderful choice for a warm spring night.

Equipment

  • a large skillet / wok

Ingredients

  • 2 pound chicken breast cut to 1 inch cubes
  • 3 bell peppers medium size
  • 1/2 onion white or yellow
  • 4 tbsp avocado oil
  • dry red chili flakes option
  • 2 cloves garlic crushed and diced

Chicken marinade

  • 2 teaspoon corn starch
  • 1 teaspoon garlic powder
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • 1 tbsp canola oil or any cooking oil
  • 1 teaspoon soy sauce

Instructions

  • Marinade the chicken half an hour pior cooking
  • Heat the skillet over medium high heat, add in the avocado oil once the pan is hot. First to add the garlic to the pan, then( the chili flakes if you like spicy food) the onion. Stir everything well. Change the heat to high heat and add in the chicken breast to the onion and stir frequently. Lower the heat to medium high heat once the chicken changes its outside layer color and add the bell peppers. Add in the bell peppers and stir everything well. Add in the salt at the last minute to prevent the peppers from losing their liquid. Continue to stir and cook for another minute. Do not over cook the chicken and the bell pepper. Remove the skillet from the heat.
