Ingredients
2poundchicken breastcut to 1 inch cubes
3bell peppersmedium size
1/2onionwhite or yellow
4tbspavocado oil
dry red chili flakesoption
2clovesgarliccrushed and diced
Chicken marinade
2teaspooncorn starch
1teaspoongarlic powder
1teaspoon saltor to taste
1/2teaspoonblack pepper
1tbspcanola oilor any cooking oil
1teaspoonsoy sauce
Instructions
Marinade the chicken half an hour pior cooking
Heat the skillet over medium high heat, add in the avocado oil once the pan is hot. First to add the garlic to the pan, then( the chili flakes if you like spicy food) the onion. Stir everything well. Change the heat to high heat and add in the chicken breast to the onion and stir frequently. Lower the heat to medium high heat once the chicken changes its outside layer color and add the bell peppers. Add in the bell peppers and stir everything well. Add in the salt at the last minute to prevent the peppers from losing their liquid. Continue to stir and cook for another minute. Do not over cook the chicken and the bell pepper. Remove the skillet from the heat.
