Collard greens are staple vegetable of the south. It reminds me of the Chinese cabbage that we consumed so much of during my upbringing in China. Although I have never seen collard greens prior my move to the States, this vegetable became one of my favorite greens after my first try in a southern cuisine restaurant years ago. I enjoy its pleasing coarseness and mild bitterness in the taste buds.
