We all loved the tofu dish from yesterday’s lunch. It was so satisfying and delicious. I cooked three packages of tofu after our Saturday long bike ride (overly ambitious). We were super hungry and couldn’t wait to eat right away once we were home. Tofu was a perfect choice of a quick, healthy and fulfilling lunch for the moment. I had some left over chives from my previous cooking, it reminded me a yummy breakfast tofu scramble that I had somewhere many many years ago before the kids era. It inspired me to make my own version of the tofu stir fry. The turmeric powder (郁金粉) is the key spice for the tofu, it gave an earthy-sweet taste and a beautiful sunshine color to the tofu. Meanwhile the chives added some delicate onion flavor to the dish. I think some steamed rice will go really well with this tofu dish too, but we were too hungry to wait for it so we had some sourdough bread instead.
Sunshine Tofu with Chives
Equipment
- a large skillet / wok
Ingredients
- 3 package tofu cut into 1 inch cubes, let them drain for 10 minutes first
- 1 cup chives chopped, 韭菜
- 1/2 teaspoon turmeric 郁金粉,薑黃
- 2 cloves garlic smashed and cut into small pieces
- dry red chili flakes optional
- 2 teaspoon salt or to taste
- ground black pepper to taste
- 1/2 cup avocado oil or any high smoke point cooking oil
Instructions
- Cut the tofu into one inch cubes and put them in the strainer for 5 minutes to drain the liquid
- Heat the skillet over a high heat. Add the avocado oil in the pan once it's hot. Add in the ground black pepper, garlic and the dry chili powder (optional) into the hot oil. Give it a quick mix before adding the tofu. Stir the tofu constantly to make sure they're well mixed and seasoned. Let the tofu cook for 5 minutes and add the salt. Give them some good mix and then add the turmeric powder to the tofu. Stir everything well and let them cook another 5 minutes in the high heat. Add in the chives at the last moment. Mix them well and remove the skillet from the heat.
